::INGREDIENTS::
**SERVES 4**
Scallops:
Spinach:
- 12 oz Spinach, de-stemmed
Mango Cherry Relish:
- 1 Cup Cherries, pitted and halved
- 1 Mango, diced
- 1/2 Cup Blackberries, halved
- 3 medium Strawberries, hulled
- 1 Tablespoon Dijon Mustard
- 2 Tablespoons Nature’s Agave Amber Agave Syrup
- 1 teaspoon grated Fresh Ginger
- 1 Tablespoon Fresh Tarragon Leaves
::DIRECTIONS::
For Scallops & Spinach:

For Mango Cherry Relish:
- In a blender or food processor, Combine Strawberries, Mustard, Agave, Ginger, and Tarragon and blend until smooth.
- Stir in remaining ingredients.
- Allow flavors to meld for at least 30 minutes at room temperature before serving.
