::INGREDIENTS::

**SERVES 4**

Scallops:

  • 1 lb. Scallops

Spinach:

  • 12 oz Spinach, de-stemmed

Mango Cherry Relish:

  • 1 Cup Cherries, pitted and halved
  • 1 Mango, diced
  • 1/2 Cup Blackberries, halved
  • 3 medium Strawberries, hulled
  • 1 Tablespoon Dijon Mustard
  • 2 Tablespoons Nature’s Agave Amber Agave Syrup
  • 1 teaspoon grated Fresh Ginger
  • 1 Tablespoon Fresh Tarragon Leaves

::DIRECTIONS::

For Scallops & Spinach:

For Mango Cherry Relish:

  1. In a blender or food processor, Combine Strawberries, Mustard, Agave, Ginger, and Tarragon and blend until smooth.
  2. Stir in remaining ingredients.
  3. Allow flavors to meld for at least 30 minutes at room temperature before serving.
