Decadent Chocolate Cakes

As demonstrated on KUSI on Mother’s Day, Sunday, May 9, 2010

Ingredients:

  • 12 oz 72% Dark Chocolate
  • 6 oz Butter (1 1/2 sticks)
  • 1 Tablespoon Vanilla Extract
  • 1 teaspoon Salt
  • 4 eggs
  • 1 Cup Sugar (7.5 oz)
  • 3/4 Cup Sifted Flour (3 oz)
  • 1 teaspoon Salt

Directions:

  1. Melt chocolate with the butter, vanilla, and salt in a double boiler. Reserve warm.
  2. Whip eggs with sugar in a mixer for 5 minutes. (You may mix longer, but not shorter.)
  3. Pour warm chocolate mixture into whipped eggs and stir together.
  4. Gently stir in the flour.
  5. Pour into prepared cupcake molds until 3/4 full and bake in a 350 degree oven for 20-25 minutes, or until wooden toothpick inserted into the center comes out with fudgey bits attached.

Notes:

  1. You may add 1/8 cup of your favorite liqueur in with the chocolate mixture for a little added flavor.
